About the role

We specialize in curing and smoking bacon, ham and other meat products and we are proud to sell locally sourced beef, pork, chicken and lamb. We have had great success selling grass-fed, dry aged beef and we are looking to expand our fresh meat and value-added offering. For the right candidate there will be a full time position and the chance to develop and manage our butchery section.

Butcher role

Responsibilities for the right candidate:

  • Setting out the counter display and topping up.
  • Classic butchery & meat preparation (primal cuts and some carcass work)
  • Food production (sausages, burgers, etc)
  • Serving customers
  • Managing the butchery section
  • Stock control
  • Smoking and curing (training provided)
  • Keeping up to date with modern cuts and styles.
  • Preparing orders for delivery.
  • Researching and developing new lines, products and offers.

About us

G.H. Porter Provisions is a smokery and delicatessen with an impressive heritage. Bacon and pork have been speciality products since it was founded by the Porter family c.1890, and the traditional brick kiln smokehouse has been in continuous use for over 120 years.

We have become famous for our range of cured and smoked pork including OWD John bacon which follows a 400 year old recipe. In addition to smoked pork products, we sell cured bacon and hams, gammon, black pudding, potted meat, scotch eggs and a range of pies and sausages, including one made to a 100 year old secret recipe.

The smokehouse

Selected flitches of bacon and other items such as hams, sausages, cheese and garlic are smoked in our original cellar smokehouse. The range of cured bacon includes the usual cuts such as short back, middle and streaky. We also sell house specials including triple smoked, house smoked, maple cured and OWD John.

In addition to bacon, we sell a range of cured, dry-aged hams, gammon and ham hocks.  All are available both smoked and unsmoked.
Here at GH Porter, we also smoke cheese and have become renowned for our smoked Lincolnshire Poacher, Cheddar and Stilton.

The deli

We sell a range of deli items such as jams and preserves, condiments and pickles and locally milled flour, but we specialise in cheese, tea and coffee.

For 45 years, we have sold specialist cheeses and once supplied Fortnum and Mason with Cropwell Bishop Stilton. Today, Porters is the only place in town to sell local cheeses as well as creating a unique range of smoked cheeses on-site.

We roast specialist coffees and sell high quality loose tea together with related items such as cafetieres and tea pots, etc. Coffee is purchased green and roasted in the shop to ensure it is always super fresh. The delicious smell of fresh coffee wafts across the market square and draws people to the shop where they can choose from a range of coffees and then have the beans ground to their particular tastes.
